Strawberry Basil Jicama Chicken Salad

I guess this is the part of the recipe post where I ramble on about why this salad is the best thing since sliced bread and you, the reader, scroll right past everything I wrote to see the recipe below. Maybe I could just skip this part going forward, and we can get straight to the point, but if you are the type of person who actually reads the detail this is for you (everyone else can just continue scrolling down). On a more serious note, this is a perfect simple summer salad which is low in carbs without sacrificing any of the flavor. We collaborated on this recipe with a local photographer kwatkinsphotog.

Strawberry Jicama Salad-Scaled-1020x1800

A bed of mixed greens and arugula tossed with fresh basil to add flavor! Then I top the mixed greens with fresh strawberries, chopped Jicama, pre-cooked chicken, nuts, and Feta. The Jicama adds a perfect crunch, so you won’t feel like you are missing the croutons.  I am not a nutritionist but, if you aren’t familiar with Jicama, Jicama is a root vegetable with lots of nutrients, antioxidants, and fiber (also makes an amazing snack on its own or when paired with Tajin seasoning).

This recipe can be prepared with any cooked chicken or protein, but I recommend it with my lemon pepper grilled chicken. Also, if your protein goals are higher, feel free to double the protein! Serve with my homemade Strawberry Lemon Vinaigrette recipe or your own favorite dressing to complete!

Strawberry Basil Jicama Chicken Salad

Ingredients
  

  • 1 cup Mixed Green
  • 1 cup Arugula
  • 1 tbsp Freshly Chopped Basil
  • 100 grams Pre-cooked Chicken pairs well with my Tangy Lemon Pepper Chicken or can use rotisserie chicken if in a pinch)
  • 1/2 cup Fresh Strawberries
  • 1/3 cup Jicama
  • 1/8 cup Walnuts
  • 1/4 cup Feta Cheese
  • 1/4 cup Strawberry Lemon Vinaigrette refer to my Strawberry Lemon Vinaigrette Recipe or use your favorite recipe

Instructions
 

  • Add greens, arugula, and freshly chopped basil to a bowl. (Optional – I prefer to chop the greens up as well)
  • Top greens with strawberries, jicama, walnuts, chicken, and feta. (Optional– Not pictured, but I chopped the chicken into tiny pieces to make the salad last longer when eating!)
  • Serve with my homemade Strawberry Lemon Vinaigrette or your own favorite dressing to complete.

Notes

  • Chop everything (including the bed of greens, and chicken) into bite size pieces to create a chop salad that will last longer!
  • Double the protein if you have higher protein/calorie goals
