Hint of Honey Mustard Smoked Pork

This is a simple meat with only a hint of honey mustard so it that can be served as main dish or used to add to any salad, sandwich, etc. and makes it great for meal prep. While you can use the marinade and then grill the pork, I highly recommend using the smoker if you have one. Using the smoker makes it more similar to a deli meat which I think is better for meal prep.

In order to get that deli meat vibe, you want to make sure to marinate for at least 3 hours up to overnight. To make the marinate I used vinegar, garlic, mustard powder (use normal mustard if you have it and don't want to buy a new seasoning), and honey. I like to keep the marinade simple for this to use in more recipes but you could always add more mustard power and honey if you want a stronger honey mustard flavor. To save on dished I normally make the marinade directly in a ziploc bag and then throw in the pork tenderloins when ready.

Honey Mustard Flavored Smoked Pork

The Traegar makes cooking almost fool proof but you could also do in the oven or grill. If you want it even easier you can honestly just set the smoker to 225 degree F and leave it on for 3 hours. However, basting throughout  with reserved marinade helps keep it from drying out. Once it's reached 145 degrees F  internally, you can pull out and let it rest a little bit before slicing. Then I like to slice as we eat it and make sure to slice super thin. The recipes calls for two tenderloins, so we normally slice one and eat the night of cooking and then save the other one for sandwiches and slice as needed.

Ingredients
  

  • 2.5 lbs Pork Tenderloin Approx. 2 Tenderloins (half pack from Costco)
  • 1/2 Cup White Balsamic Vinegar I used flavored (peach) but plain works
  • 2 Tbsp. Honey
  • 2 Tsp. Ground Dry Mustard
  • 2 Cloves Garlic Fresh or Frozen
  • 2 Tsp. Salt or to taste

Instructions
 

  • Combine all ingredients (minus the tenderloin) into a shallow dish or ziplock bag to make the marinade
  • Reserve about 2 ounces of marinade for basting
  • Add pork loins into marinade. Let marinate for 3 hours to overnight.
  • Set smoker to 225℉ and pre-heat for 15 minutes.
  • Add the marinate pork tenderloin to the smoker and let sit for 3 hours (flipping once halfway through) or until it reaches an internal temperate of 145℉ Baste with reserved marinade every hour.
  • Let rest for 15 minutes minimum and slice thin when ready to serve.
