Instructions
Blend strawberries, lemon vinegar, honey, and salt until smooth using the blender (can also use an emulsion blender).
Slowly add in olive oil while blending until incorporated into the dressing.
Serve over your favorite salad!
Notes
If you are unable to obtain lemon white balsamic vinegar, feel free to substitute with a white wine vinegar mixed with fresh lemon juice and a little extra honey. However, in my opinion, an investment in flavored vinegars is worth it!
This dressing tastes best after it’s been refrigerated for at least 30 minutes. If time allows, I recommend letting the flavors marinate together before serving.
May want to double the recipe if serving a crowd or to have leftovers during the week!
