My dad always has the best recipes, and his Fettuccine Alfredo is one of the best of the best. It's comforting, delicious, perfectly rich without being too rich, and comes together with just a handful of simple ingredients.

Now, I know someone is going to say this isn't authentic Fettuccine Alfredo. And while I'm not here to argue, my personal opinion is that fettuccine without heavy cream is just butter noodles. And while I absolutely love a good butter noodle, I think Alfredo deserves its own creamy category!

There's also one special ingredient I think everyone tends to leave out of their Alfredo: NUTMEG! It might seem like a small addition, but that little dash of nutmeg is what pulls the whole sauce together. Trust me on this one.

Whether you're making a quick weeknight dinner or want something a little more special, this easy homemade Fettuccine Alfredo is one of those recipes you'll keep coming back to.

Ingredient Notes

  • Heavy Cream: This is what gives the Alfredo sauce its signature rich and creamy consistency. It's my preferred way to make Alfredo!
  • Freshly Grated Parmesan: It is required to grate your Parmesan fresh. It melts much more smoothly into the sauce than pre-shredded cheese.
  • Butter: You can keep things simple with regular butter or fancy it up with an infused butter. I love using plain butter most nights, but when I'm feeling a little fancier, white truffle butter is a favorite. Garlic and herb butter is another great option.
  • Nutmeg: Freshly grated nutmeg is my preference, but ground nutmeg works just fine, too. You can technically make this without it, but I promise it's what brings the whole dish together!
  • Fresh Cracked Pepper: I like to be generous with freshly cracked black pepper. It adds just the right amount of flavor and balances out the richness of the cream and Parmesan.
  • Fresh Oregano: I used fresh oregano as a garnish for the photos, but that's purely for aesthetics. On a normal weeknight, I'd save your money and skip it!

Equipment

You don't need any special equipment to make this recipe, but a double boiler saucepan is a nice addition if you have one. It allows you to gently heat the cream, butter, and Parmesan together without overheating the sauce. It's also great for gently infusing the butter and cream with all those delicious flavors.

A regular heavy-bottomed saucepan or skillet works perfectly well, too. Just keep the heat on the lower side and stir frequently.

Tips for the Best Homemade Fettuccine Alfredo

  • Don't rush the sauce: Keep the heat at medium-low when warming the cream and melting the Parmesan. A gentle heat helps keep everything smooth and creamy.
  • Grate your own cheese: Freshly grated Parmesan melts much better and makes a noticeable difference in the finished sauce.
  • Don't skip the nutmeg: Even a small dash adds a subtle warmth that makes this Alfredo stand out.
  • Serve immediately: Alfredo sauce is best served fresh. It thickens as it cools, so toss the pasta with the sauce and get it to the table while everything is warm.
  • Save some pasta water: If your sauce gets a little too thick, a splash of reserved pasta water helps loosen it up and coat the noodles.

Ingredients

  • 1 9 oz package fettuccine pasta
  • 2 cups heavy whipping cream
  • 1 ½ cups freshly grated Parmesan cheese
  • 2 tablespoons butter white truffle or garlic and herb infused butter are great upgrades!
  • A dash of freshly grated nutmeg or ground nutmeg
  • Salt to taste
  • Freshly cracked black pepper to taste, plus extra for serving

Instructions

  • ring a large pot of salted water to a boil. Cook fettuccine according to package directions until al dente.
  • While the pasta cooks, add heavy cream and butter to a heavy-bottomed skillet or saucepan over medium-low heat.
  • Once the butter has melted and the cream is warmed through, stir in the freshly grated Parmesan, nutmeg, salt, and freshly cracked black pepper.
  • Continue stirring gently until the Parmesan has melted and the sauce is smooth and creamy. Avoid letting the cream come to a rapid boil.
  • Add the drained fettuccine directly to the Alfredo sauce and toss until every noodle is coated.
  • Serve immediately with additional freshly cracked black pepper and Parmesan cheese.

Notes

  • Freshly grated Parmesan: This is key to a smooth Alfredo sauce. Pre-shredded Parmesan doesn't melt as nicely and can leave the sauce grainy.
  • Fancy it up: I love using an infused butter, especially white truffle or garlic and herb butter. It's an easy way to add another layer of flavor without adding extra ingredients.
  • Keep the heat low: Alfredo sauce can separate if overheated. Gently warm the cream and melt the cheese rather than bringing the sauce to a hard boil.
  • Serve immediately: Alfredo is best enjoyed fresh while the sauce is warm, creamy, and coating the pasta.
